    Hey man, love the recipes! I'm having a really hard time finding fat free cheese. Best I have found is a lower fat cheese. I've shopped at a few grocery stores and Walmart, still can't find fat free. Any tips?

    I just made these for dinner and they were amazing! Even my gf agrees and she thinks I made something completely unhealthy. I did have to settle with reduced fat cheese though but I got the Mexican blend since the macros were the same as the others

    been making enchiladas this way couple years. my only changes are most time i use fat free ground turkey (lower calorie higher protein than beef?)and i usually add salsa and fat free cheese to each enchilada before topping everything with more FF cheese and homemade enchilada sauce. im doing this tonite. thx for another great vid

    El Pato canned jalapeno salsa is great to use in place of enchilada sauce if you can see past the sodium content. Honestly I always just use whatever salsa I have around when I make enchiladas. I like the additional heat & if someone is sensitive to hot stuff the heat does dissipate some when cooked IMO.
