So i just tried this tonight and it was truly delicious. Its not gluggy like some other stroganoff recipes, the sauce maintains a creaminess and its very hearty whilst still being quite light. i didnt have to add any salt at any point there was enough seasoning and flavor from all the other elements of the dish. 10/10 will be making it again. Non vegan family loved it too its a total crowd pleaser.

I always cook the mushrooms down without oil to remove the water, then I'll throw in the oil and crisp them up. Always works out great

Non-vegan tips: cook the mushrooms in Ghee butter!!! The mushrooms just absorbs the flavour of the ghee so well.
In english words aren't necessarily pronounced as they are written:
worcestershire = wus – ta (shu)
gloucestershire = glos – ta – shu
keighley (town in northern England ) = keeth – lee
