Girl, I just made these and they were great. I didn't have any chilis so I used chili powder. I also added a little shredded chicken, and these were great. You Rock. So easy.

Stacked Enchiladas are also a Nuevomexicano/New Mexican thing. I grew up with enchiladas similar to these. There are few things that are as good, to me, as a nice stacked red enchilada. We moved out of New Mexico when I was a kid. Things like this remind me of my early childhood in Nuevo Mexico.

A favorite old family recipe, lots of Fridays we would have 3 highs, stacked with cheese, Anaheim chiles, green and white onions, and black olives. My sister and I would only eat half, but would eat the whole egg.
