Wish you had a restaurant. It is hard to find flavorful Mexican food. Not that I can't find it. I know a few places but most are really chains popular for chips salsa and margaritas.

I can’t get enough cheese. What kind of melting Mexican cheese do they use at Mexican restaurants? It’s white and sometimes it has just a touch of spice. They serve it with chips and cheese dip. I tried melting down
Oaxaca cheese and it was too clumpy

I love Mexican food. Love love love. But I hate cooking it Only because there are always so many ingredients. And I take forever prepping before I even start cooking. So we have sn authentic Mexican rest mom and pop shop here in my little town in oh so I get lazy and just order to go. But with prices going up I need to watch more of this show and make my own and maybe a little extra and freeze it.
I am not a cheese person. But, that looked delicious.
