It may be Pi Day, but tonight in this house it was "Let's Try Quang Tran's Quick Pho" Day. Verdict? Not too shabby for a 20 minute broth. I did have to substitute beef chuck eye roll with veal scallopini – literally the only suitable meat left at my local Shop Rite for this recipe given a near total run on their meat department with the coronavirus – but it did the trick 🙂
