I'm literally making a version of your soup today in Minneapolis, MN USA. Thank you. I'm using frozen garlic (microwaved for 15 seconds and then diced) diced onions, celery and carrots and peas and a little butter in place of the olive oil and will add a roma tomato diced, a can of strained chickpeas, some chx bullion and water with some dried herbs to finish.
This is probably my favourite chickpea dish of all time

What about adding, at the beginning, some chopped tomatoes? And maybe some paprika; both would add a nice colour and extra flavor.
I love your vegan recipes, I just made this soup (had no celery so added a bit of bell pepper and some spring greens) and it was so good, fresh and colourful, so tasty , the lemon juice and the parsley at the end make it just perfect!! Thank you so much !!
Enough of the chickpea! There are so many dried pulses you can cook with, most are better tasting and healthier than chickpeas. Geez

you should save the liquid from the jar/can of chickpeas. Aquafaba is a great egg white alternative. whip a sour cocktail
