    I love your channel! I love the usefulness and the realness. I don't know if you've heard of a Burmese/Myanmari dish called Laphet. It's fermented tea leaf salad. It is incredible. I had it in Thailand and it became one of my favorite things to eat I would eat it all day, every day for the rest of my days. I hope you might make a video on it…

    I know that lye seems scary or whatever, but it's so so worth it. Like, indespensible. Baking soda water doesn't even come close to the browning and chew and flavour. Just make sure you get food grade lye. So good.

    Have you ever made ketchup the old fashioned way? Not adding vinager, but fermenting your own salted tomato puree. I don't even add sugar to mine. With the carmelization of the onions later, its plenty sweet. The fermented funkyness is so much better than mass produced plain old distilled vinager.
