I started using a 3 inch deep circular pan instead of a springform pan and no more cracks.
I was baked for 9 months and came out with a plumber's crack. Shucks. Otherwise helpful.

never used water bath, never had a crack, open oven last 10 minutes and turn heat off a little early.

Goodness knows I don't want crack in my cheesecake. I might eat the whole thing in one sitting. Then I'd really be in trouble.

oven instructions are not correct. 350F for 45 mins. and 325F for how long? not accurate.

I'd appreciate a lesson on how to make a cookie- or graham-cracker crumb crust. Mine either fall apart or stick to the bottom of the pan.
