    1. Use mustard oil to coat the eggplant
    2. Make small slits and stuff it with some garlic
    And see the flavor elevate to a next level.
    Similarly roasting vegetables in oven with mustard oil will not compromise the taste and you also need not strain the roasted eggplant as that water can be really flavourful.
    Traditionally the green chilies are not chopped finely. They are bigger pieces and it works perfectly in case you don't want to chew them then you can remove it.

    In my country we also have dish where we cook the eggplants like that, but I learned to wrap it in foil and that way your house will be less smelly and it cooks out great.

    I really look forward to trying this dish. As someone with a little sister, what worked for me to get her to eat eggplants was to add them blended into tomato sauce whenever we make pasta or pizza.

    There it is! I had remembered seeing this recipe somewhere, and wanted to use it for a dinner party to honour my garden glut of eggplant. Spent an hour on youtube trying to find it before I remembered your newsletter. It was delicious.

    We honestly just boil the egg plant in water, it is not smoky but gets soft and serves the purpose ..just allows to remove the skin, for tanginess we also add tamarind (imli) in it towards the end.

    Anglo-Indians don't use the masalas. We mash the chared eggplant like you, then we add finely chopped onions, tomatoes and green chillies raw with a squeeze of lime. Salt to taste of course. Thats it. Some add very finely chopped (or powder) garlic. šŸ™‚

    Iā€™m an eggplant lover and this dish sounds amazing!
    I usually roast my eggplant pieces in my airfryer (tossed with salt&oil and on top of some aluminium foil) and now Iā€™m tempted to try roasting it in there whole.

    Totally off the subject of this video, do you have a video for aloo masala? Iā€™m not sure if thatā€™s a dish from the region of India your parents are from. Iā€™ve been following you for some time now and I consider you a go-to for delicious recipes, especially Indian dishes! Iā€™ve been craving aloo masala (the Indian restaurant in my local food court makes it very yummy and I wanted to make some at home). I figured Iā€™d check with you first before surfing the Internet for a recipe. šŸ˜Š

    My question is, how do I get my dad to like Indian food in GENERAL? I canā€™t believe that Iā€™m even related to him, bc he HATES INDIAN FOOD!!! Like, cmon man!!! He had to bear it on my birthday, and every birthday (and after that bc Iā€™m always gonna have Indian food from now on, lol) tho bc I had Indian and Italian food, but he just ate his Italian food. He hates the smell of it even cooking. I canā€™t microwave a Tasty Bite meal, even. (Those are delicious btw, if youā€™ve never tried them, theyā€™re pretty cheap too, they come in Vegetable Korma, Lentils, etc) HOW DO I SOLVE THIS MYSTERY CAE?! šŸ˜©

    Oh, thank you for the roasting on the pan advice.
    I usually bake it in the oven untill it's charred but that for sure consumes more time and energy (thanks Putin for my high electricity bill šŸ–•) than roasting on a pan. šŸ™šŸ¼

    Itā€™s really cool watching you highlight Indian recipes on your channel. Iā€™m not sure where you were born and grew up, maybe there werenā€™t many Indian people around you. I was born and raised in Jersey and make a point to learn proper pronunciation for everything so that everything doesnā€™t get white washed. Iā€™m not necessarily saying this as a hater. We have a beautiful culture and Iā€™d hate to see it lost or words changed for a white audience.

    Nice effort . Although it was not quite the Bharatha in all its glory and beauty . Bharta without mustard oil is a criminal offence ( in my and most Indian's opinion ). Mustard oil makes all the difference and also it was missing a sour ingredient . This was only 1/10th the real bharta thats to die for .
    Also , instead of chopping the eggplant if you dont want to use the flame , use a microwave or better yet oven grill .If you can use wood fire the bharta get the new dimension (and is more authentic that way )
