Tried the Buttermilk soaking about a month ago, sans the spices overnight and it was amazing how juicy the chicken breast was! Next time I'll most definitely try the spice mixture, and yes, Corn Starch does indeed make make a big difference when it comes to a crispy coating which I learned from a Chinese chef about 40 years ago.

Great recipe, but I've never had a video drive home the reality of this style before. Like, it reminds me way too hard that in real life there are no iumpcuts or background music. Just a woman trying to make it look natural as she just happens to bite the chicken right in frame perfectly, and pretending she makes grimace faces and speaks with the perfect timing for cut aways and audience reactions…very cringe. Oh sure, who doesn't provide out loud commentary and self reflection in a quiet room as if there's an audience while pointing at things around them. You actually had to let that chicken cool in the basket for like 10 minutes before staging the perfect "oh look how wild and spunky I am just biting into my lovely recipe right from the basket oh mmmm!" Very illusion breaking.
