    I think you made 1/2 OZ meatballs. 3 lbs of chuck is 48 grams of meat. I know you added volume w the other ingredients, but I doubt you doubled the mass.
    You also made caution of "overworking the meat" so there is probably a bit of air trapped in those juicy nuggets.
