I cooked pot roast for the first time today. I didnβt have two of the ingredients so I had to improvise. But omg it turned out so tender and delicious. I will never order pot roast in a restaurant again, Iβll be cooking my own. Thanks so much for sharing this recipe.
Great job cooking it for 3 hours. I hate seeing videos that say 90 minutes. Sure, it's cooked – but it's still tough. It really needs that 3 hours to become delicious.
But if you're gonna put potatoes or carrots in your roast you don't do it at the start. You do it about 30 minutes before it's finished.
If you add potatoes and carrots from the start you end up with pure mush. By waiting until the end, they keep their form. They're still soft, but they don't just melt away.
Also I always flip my roast half-way through. That way both sides get that extra "crust" that gives a nice contrast between the buttery soft interior and the meaty exterior.
