I cooked pot roast for the first time today. I didn’t have two of the ingredients so I had to improvise. But omg it turned out so tender and delicious. I will never order pot roast in a restaurant again, I’ll be cooking my own. Thanks so much for sharing this recipe.

Great job cooking it for 3 hours. I hate seeing videos that say 90 minutes. Sure, it's cooked – but it's still tough. It really needs that 3 hours to become delicious.

But if you're gonna put potatoes or carrots in your roast you don't do it at the start. You do it about 30 minutes before it's finished.

If you add potatoes and carrots from the start you end up with pure mush. By waiting until the end, they keep their form. They're still soft, but they don't just melt away.

Also I always flip my roast half-way through. That way both sides get that extra "crust" that gives a nice contrast between the buttery soft interior and the meaty exterior.

Just wandering what happens if you over cook a pot roast does it start to get tough? In about to make this recipe tommorow and toss it in before church but that would be about 3 1/2-4 hours

I'm not going to lie, I feel weird about not rubbing the meat with all the seasonings before searing but mine always comes out under seasoned, even when using all this same seasoning so I'm going to try it.
