    i wonder why you don't use coconut cream type frostings more often…Maybe because it's canned..?…But you could also blend up "fresh' coconut, or blended coconut chips or flakes…i think coconut is one of the most perfect foods, together with chocolate, especially….Or maybe a blend of cashew and coconut….πŸŽ‚

    If you are not strictly gluten Free, you can use half Wheat Flour and half oat flour. That's what I did this past weekend when I made Jill's Oreo Cake. It stabilizes the crumb and it's easier to handle with the Wheat in it.

    Just a suggestion: Tiger nuts are marble sized tubers. They may work are a substitute for nuts in this recipe. I do make tiger nut milk and then use the pulp in baking…it works the same as almond pulp. tiger nuts are pretty pricey for sure, but the flavor is absolutely wonderfully sweet!
