Base: 1 box pasta of choice, I used spinach farfalleti 1 italian salami diced into small cubes (I used boars head uncured bianco d’dro italian dry salame) 1/2 cup chopped pepperoncinis 1/2 cup chopped artichokes 1/2 cup sliced green olives 1/2 cup sliced kalamata olives 1 package of mozzarella balls 3 cups of blanched kale 1/2 cup shredded parmesan 1/2 cup shredded pecorino romano
Dressing: Equal parts red wine vinegar and extra virgin olive oil (about 1/2 cup each but use more if pasta is dry.) 1 thinly diced shallot 3 garlic cloves, minced 1/4 cup fresh diced basil leaves 1/2 packet of good seasons Italian seasoning Salt and pepper to taste
Serve topped with fresh veggies of choice ex. cherry tomatoes, cucumber etc.!
