    Would you say a med-Hi or medium on the hot side of the grill. Also will a flat top grill still work ok or a traditional Grill only. In regards to the Seer of the chicken. I would like to try to make this over at my brother's since I don't have a grill but my brother grill is a solid flat top grill.

    Love your channel your recipes are great and pretty easy to execute, however this is pretty far from jamaican jerk. Pimento smoke (easiest way a foil packet with soaked pimento and bay leaves). You left out the 2nd key marinade ingredient which is ground Allspice(pimento). Soya sauce not worchestershire. For color and flavor add Browning(caramel), light brown or light green is not the most appealing color for Jerk Chicken its better darker. Nutmug, fresh thyme, fresh greated ginger, cider vinegar are also better choices for a wet marinade. Keep up with the Jerk Chicken I agree its the best chicken ever.

    Don't put sugar in the marinade cuz I did. It's not as great as it looks. Too sweet an sear chicken thighs it's only good for a small batch before the pan burns. Looks good but not easy to make a first time an not worth remaking

    I do mine similar but more of a red sauce. Use ketchup for color and cut the amount of salt because of it. Ghost peppers I do 8-10 depending on ripeness. It's hot but it doesn't burn your nuts off. Meaning it's not hot for the sake of being hot, it has flavor.

    I'm sure that chicken is great. I've made some good jerk chicken myself but I always feel like it is missing something without the pimento wood. Also, I eat a gang of jerk chicken every time I go to Jamaica and they always have something to cover it. A greasy piece of foil, old hub cab, some kind of leaves, banana or palm or something. Kind of steams them and traps the pimento wood smoke.
