    Instead of tomatoes we Bahamians serve it with sliced plantain fried, raisins or chopped ripe bananas so the sweetness of the fruit balances out the spiciness of the curry. I also add a teaspoon of sour cream to thicken the sauce or some coconut milk. And a touch of mango chutney
