I only have havarti and mozzarella and dry Parmesan should I rain check or can i give it a go ? If so at what small changes should I do for the softer cheese used ?

I'm 5 years to late but maybe somebody will stumble over my comment, so I'll ask anyway π . How important is it that the cheese melts in the crust?
The recipe calls for some kind of old and hard cheese like e.g. parmesan. Here in the Netherlands however, parmesan is so old and hard, it will not melt like it does in the video. In the US hard cheese is rarely as old and ripe as in Europe so I wonder whether I should still use parmesan even if it doesn't melt as well or should I use an old but not super hard cheese instead? That being asked, I must say that the video is much appreciated and I love your humor and your personality ππ

A lot of work to make something that tastes and feels nothing like pizza crust. This is worse than vegan "steaks" made of who knows what. If you can't eat real crust then grow up, get over it, and learn to enjoy foods you really can eat. If you enjoy fooling yourself, imagine how much others will enjoy fooling you. Get real. Eat real food. I love my low carb food. Wheat is mealy and disgusting and easy to avoid.
