    I don't know how I cooked beef or beans before I got my Instant Pot back in 2016. Since it's just me and the wife, I buy just a small chuck. I season and sear the chuck in the Instant Pot, then deglaze with water to remove the fond, before adding the chopped veggies. When I make fries from fresh cut potatoes, I add 1/2 tbsp of baking soda to the water and let them soak for a few minutes, then drain, pat dry and deep dry. I started baking flour and oil for roux a few years ago, it always seemed that I would get distracted stirring the roux in my cast iron skillet, and it burnt.

    I've never heard of placing gravy over fried potatoes. The way you make your gravy is unique, blending the veggies and then adding your roux. This is definitely a good comfort meal. It looks absolutely delicious. Will have to try. I know that most of the time ppl use butter and flour to make their roux, but I see you used olive oil. Learn something new every day.     I love steak/roast and potatoes with gravy. I never tried the fried potatoes with gravy though. It does look delicious. I can only imagine how great this dish is. I do like to sprinkle some lemon pepper on my fries/fried potatoes. Here's another great recipe for me to add to my list. Yum Yum😋 Thank you for sharing. 🙏🏾
