Can you cook it in a water bath at a lower temp❓️❓️❓️ Maybe the steam will keep it moist and it will finish cooking.
Happy ♥️ day Louise and Jeff. I've made a steak similar to this. I spread grey poupon mustard on the steak and then roll it in cracked peppercorns. I cook in the oven in a cast iron pan. Yours with sauce looks yummy.

I really enjoyed watching tonight. I have never used induction, so I'm not sure how high or hot a 9 is. Do you think that since some types of olive oil have a lower smoking point that that was what created the issue that you were having? If that's the case, what would you have recommended – avocado oil, since it has a higher smoking point?
