    I made this last night (the day you posted-lol). In my years of being vegan I have made probably 20 mac and cheese recipes. This one is the best. Nisha, you've cracked it. Last night my husband said, through mouthfuls of this pasta – "IDK what you're having for lunch tomorrow, but dibbs." Thank you for being a trustworthy recipe writer. It is so valuable knowing I can follow what you say and know it will be good. (e.g. using coconut milk for this recipe. I would not have done that, but I trusted you that it wouldn't be coconuty and it wasn't!)

    I've been a meat eater for 23 years and this recipe is BOMB AF. Doesn't taste like real mac and cheese but just as a pasta it's absolutely delicious!! I've sent this to 5 friends already to get them to try it.

    Has anybody been able to effectively reheat this?
    I’ve made it twice and it was creamy and delicious fresh, but disappointingly crumbly when I reheated leftovers in the microwave.

    I just made this, and accidently ended up eating half the bowl haha, but in my defense it was just that good! I did sub out the cashews for an equal amount of silken tofu(because cashews are very expensive where I live), but it tasted so delicious that I don't think it mattered. Thank you for sharing!

It’s one of the few holdouts that keep me from being completely vegan. I absolutely adore this recipe! It tastes so cheesy and it’s so satisfying! I love the subtle flavors in it as I’m enjoying it!     I have to say thank you, thank you, THANK YOU for posting this recipe!! I made this a couple weeks ago but never got around to posting a comment until now (I watch on a Roku, so no option to comment unless I go back later on computer or phone). Anyway, I have been searching for a decent vegan cheese sauce recipe that I like. Quite honestly I wasn't a big fan of this cheese sauce. It was quite good, but it was also very weirdly sweet, probably from the cashews (I always find that any sauces made with cashews tastes sweet to me). I may try again with walnuts instead of cashews? Would that work? Also the roasted butternut squash tasted quite sweet right out of the oven, so maybe it was just a particularly sweet squash – is that typical of butternut squash? Up until now, I had never in my life even tried a butternut squash. OMG the roasted butternut squash is amazing!! I always love trying new fruits or vegetables that I had never tried before. The beautiful mystery that is roasted butternut squash is now going to be my new obsession. Who the hell needs mac and cheese when you have a butternut squash in the house? LOL. Seriously tho, thanks again for posting this, and for all of the other amazing recipes that you share. I usually eat SOS free, but I find that many of your recipes I can just alter or adapt as needed. Thanks again!

    Nisha, Thank you 🙏🏼 so much for this delicious vegan Mac & “cheese” recipe. It is truly much more flavorful & indulgent than non-vegan Mac & Cheese. After initially stating that looks “too healthy” because of the roasted butternut squash, my non-vegan spouse said, “it really has a good flavor”. 🎯🥳 It will be difficult to leave any left overs. 😉 I am reading your instant pot cook book now.     this is definitely one of the best mac and cheese I have ever eaten! and bonus points for butternut squash for nutrition value. I didn’t add the bread topping- I also had some and just made it as stovetop mac and cheese which was so delicious as well! I used shell pasta. I almost didn’t want to buy miso paste, bu I’m glad I did- it is apparent in the flavor. Thank you! definitely a new favorite. 😌
