9 cups peeled and diced sweet potato
3 apples peeled and diced
1/2 medium onion diced
vegetable broth
1tsp. ginger
1tsp. garlic salt
1tsp. garlic powder
1/2 tsp. ground pepper
In a large pot cover sweet potatoes, apples, and onion with broth and boil until very soft. Scoop out everything, saving 3 cups or so of sweet potatoes for later, place into blender and add about a cup of broth and blend until pureed. Keep broth to add to the puree. Put the puree back into the pot and add broth until it's the consistency you want. Add all the spices, mix in well. Cover and let simmer about an hour or until the flavor is how you like it. Add the 3 cups of sweet potatoes and bring back up to a simmer, stirring often to avoid splattering. Add the gnocchi. Make sure the puree is thinner than you want so the gnocchi has liquid to absorb while cooking. Serve with parsley or green onion garnish.
