1st of all, I love Mr. Pepin. I just want to know if anyone else is bugged EVERY time with the inro??? When he is sectioning the blood orange and misses almost 1/2 of the section??? I know that I am being quirky…just wondering if anyone else has a similar reaction????

Jacques Pepin is a gentleman among men and classy all the way. I miss when chefs on tv used to teach us how to cook. Nowadays the food network is nothing but cooking competitions. Thank goodness for Jacques Pepin and America’s Test Kitchen.

First, Jacques Pépin is the greatest. I’ve made many of his recipes with success. I tried the chili and I had to add time on the pressure cooker twice for a total time of 45 minutes before the dried beans were done. If I make again I will also brown the meat in the multicooker first and sauté the onions.
He wrote a book in french « La technique » aka « The technique ». You know that means he’s on another level, not just making quinoa salads and calling himself a chef

I love this show, but my understanding is that trad chili is made from chilies – lots of them. No beans. That is how i do it. More labor to clean out the stem and ideally skin them. I gave up on skinning them. My kids like it.
