📝 EASY EGGPLANT CURRY | Instant Pot Eggplant

makes 4 servings

1 tablespoon oil
1 tablespoon curry powder
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon nigella sativa seeds
1/2 onion. thinly sliced
2 cloves of garlic, minced
1 can diced tomatoes, or 3 fresh diced tomatoes (about 2 cups)
1 medium Italian eggplant, cubed
1 cup water
1 teaspoon sea salt OR 1 teaspoon veggie bouillon paste
black pepper to taste
cooked rice for serving

Start by turning the instant pot onto sauté for 10 minutes.
Warm the oil in the pot, then add the curry powder, coriander, cumin, and nigella sativa to fry for 30 seconds.
Add the onions and garlic, and cook until onions start to get tender (about 3 minutes).
Add the diced tomatoes, and stir.
Add the eggplant, water, and salt, then place the lid onto the pod. Make sure the release valve is sealed.
Turn the Instant Pot to pressure cook for 5 minutes.
Once cooked, allow it to natural steam release for 3 minutes before doing quick release.
Remove the lid, and season to taste with more salt and pepper.
Serve over rice. Try my coconut rice recipe (click the black bean stew link above for it)

Without the Instant Pot: Do everything the same in a dutch oven or large stove pot, but cook the eggplant about 30 minutes, or until tender. Add more water to make a broth if you’d like.

    Thank you for are your awesome recipes. My family and I have been on a pliant based diet for 6 weeks. Wow I feel so much better and more energy than I've had in a very long time my arthritis is so much better in my hands my husband was 335 lb we went to the doctor yesterday he's down to 309 pounds and his cholesterol has already dropped down tremendously.     The black bean dish is amazing! I’ve made it twice. The first time i soaked the beans and the second I didn’t. Everyone preferred the soaked bean version. Today I’m making it again but this time i couldn’t t find the same black beans so bought black turtle beans. I hope it tastes as good!

    OMG! I tried these recipes over the past few weeks. I just made the Spaghetti squash Alfredo. It’s now my favourite spaghetti squash recipe and the sauce is sooo delicious, better than any low-fat Alfredo sauces I tried to make before being vegan (I had Ripple pea milk and tapioca flour so I used them instead). Your black bean recipe is the tastiest one I have ever eaten. Thank you! Thank you! Thank you for sharing! 😋

    I tried the Coconut Black Bean Soup – it was amazing. I followed the recipe exactly, but didn't add the salt because we're cutting back on salt, and it was still fabulous. You are a culinary genius! Thanks so much for posting. Can't wait to get your book.

    Hi, you said that you like to soak your beans, even though the Instant Pot will do the job for you. Can you tell us that the difference is between pre-soaking them and allowing the Instant Pot to do the work for you?

    Thank you so much! I got an instant pot for Christmas, and have been having quite the adventure learning how to use it. My first meal, beans and rice didn’t turn out. I didn’t cook it long enough and the beans were very al dente! My second try, oatmeal, came out great. But my third attempt, with your spaghetti squash recipe was the piece de resistance! My husband and I both loved it. In fact, I’m going to try just the sauce over a few other things too. I’m thinking elbow macaroni, or roasted potatoes. Lots of delicious possibilities.
    But again, thank you for so many wonderful ideas for good food. You’re a real inspiration, and you have a really pretty smile too.

    Those all look wonderful. BTW, I've soaked my beans before leaving for work rather than overnight. Upon my return home, everything is ready to go for a fast dinner. I've even done that with lentils (although it's not really necessary), resulting in a creamy stew.
