This morning, I tested out a super simple strawberry cake recipe for Valentine’s Day. Since Max is my strawberry cake lover, I asked him to judge it.
OMG! You ended with my FAVORITE grocery store Dance Vid!!!!!
Max was thinking…Could you stop talking and cut the dang cake already!
You are so funny!
Blend wet ingredients/make applesauce at same time…genius! I'm making this!
You were born for seemingly SO many things! This is one. Have you considered an I Pot dessert cookbook? Thanks for your genius in the kitchen from one who likes to keep it light, easy, vegan and simple. That said, Iโm MAKING this cake!
You might think of getting a 32 ounce container for your Vitamix. That's what I did after I had the same problem you mentioned, of the 64 ounce container not being able to blend small amounts. The 32 ounce is perfect for cashew cream.
I was viewing Chef AJ and she gives discounts for the products she advertises and I am sure she also gets something financial when someone buys through her site. This opportunity could work for you too. Blessings
Do you have beet powder?
It's sold to put in smoothies, but it also makes a beautiful red velvet cake without the FD&C Red 40!
Thank you for this recipe! I plan to make it for Easter dinner! YAY
I made a cake today with topped with a 'buttercream' of walnuts, cocoa and dates with some water and cornstarch until it cooked in my blender at about 190 degrees F. It was wonderful.
Love your chipmunk singing! lol
Can't wait to make this cake. By the way Jill, you are just too cute!!! Love watching your videos. They always make me giggle ๐
I tried, but it died ๐ My cake was a failure. It had a really strong baking soda taste. I followed the recipe exactly. It looked and smelled delicious, and the frosting was fantastic. I don't know what I did wrong.
You make everything so easy and delicious. Great frosting! Loved it for Valentine's Day! Thank you!
Loved this! Yummmmmm..Happy Valentines Day ๐
Made this yesterday evening… I put some dried cranberries on top of the cake (only on the edge; to accentuate the heartshape) en I grated some extra dark chocolate over the frosting. It is JUMMY! ๐
Jill I am making this tomorrow! Is there anything you would have changed to make it less dense or do you think it's ok???
Looks good! I'm totally making this today. I'm considering trying a little aquafaba in it to see if it helps with the density. Do you think it might work?
Oooh, I bet you could crush up some freeze dried strawberries to dust on top to add a burst of bright red. Or mix it into the frosting to make it pinker.
Oh my goodness YUM! Thank you!
Love this, going to try it!๐
Just made this for my daughter's birthday. This is now my go to cake recipe. Yum yum!

Thanks for the recipe Jill! Making this for DH for sure! Made your awesome broccoli salad for dinner last night- wonderful as always!
Looks good!!! So, what was the other cake for? I mean, other than to eat up…hehe
Looks delicious Jill!!
Nice ears! ๐
Genius! Thanx for sharing! I've just found you and subscribed! ๐๐โค
That looks fabulous! So when I need something to taste super-strawberry-eeee, I grind dehydrated strawberries from Trader Joes into a powder. That would be perfect for your frosting. Not only does it make for a great strawberry taste, but it'll get you the pink/red color you want…without food dyes. about 1/2 cup of dehydrated strawberries will yield 1 1/2 tablespoons of strawberry dust. I just used this in my strawberry meringue kisses. Vegan, of course:-) xoxo
You tasted it like a bunny:)!
Thanks for another recipe Jill!
๐๐๐ Love it!! This is perfect for Valentine's Day!
Ooo the frosting mmm! What a great use of cashew cream. Also, who is the party pooper who thumbs down this video? A rabid pie fan perhaps? So weird.
Sprinkle mini chocolate chips! Yummy! Looks so good!
Hey did you leave the skin on your apple?
That looks so delicious!! ๐๐๐
