This morning, I tested out a super simple strawberry cake recipe for Valentine’s Day. Since Max is my strawberry cake lover, I asked him to judge it.

    You might think of getting a 32 ounce container for your Vitamix. That's what I did after I had the same problem you mentioned, of the 64 ounce container not being able to blend small amounts. The 32 ounce is perfect for cashew cream.

    I made a cake today with topped with a 'buttercream' of walnuts, cocoa and dates with some water and cornstarch until it cooked in my blender at about 190 degrees F. It was wonderful.

    I tried, but it died ๐Ÿ™ My cake was a failure. It had a really strong baking soda taste. I followed the recipe exactly. It looked and smelled delicious, and the frosting was fantastic. I don't know what I did wrong.

    Made this yesterday evening… I put some dried cranberries on top of the cake (only on the edge; to accentuate the heartshape) en I grated some extra dark chocolate over the frosting. It is JUMMY! ๐Ÿ˜€

    That looks fabulous! So when I need something to taste super-strawberry-eeee, I grind dehydrated strawberries from Trader Joes into a powder. That would be perfect for your frosting. Not only does it make for a great strawberry taste, but it'll get you the pink/red color you want…without food dyes. about 1/2 cup of dehydrated strawberries will yield 1 1/2 tablespoons of strawberry dust. I just used this in my strawberry meringue kisses. Vegan, of course:-) xoxo

    Ooo the frosting mmm! What a great use of cashew cream. Also, who is the party pooper who thumbs down this video? A rabid pie fan perhaps? So weird.
