    Hi!
    You have shown so many Potato recipes. In all of them cut pieces of potato are directly put into the pan without washing them to remove the free starch. Is it the way potato recipes are done in Spain?
    I am from India and in most of our potato preparations we always wash and drain the cut pieces before putting them in oil.

    Having discovered your channel last week, & as a long term vegetarian, I am loving your recipes. As an archaeologist, I notice you often refer to the historicity of Spanish food, so I wonder if you know which ingredients were traditionally used b4 potatoes, tomatoes, capsicums & corn were introduced from the South Americas after 1492 when Columbus sought a new trade route to the Indies; from which, of course, spices such as cumin & pepper originated; while garbano beans (aka 'chick peas because they look like the head & beak of a bird), onions, garlic & olive oil are all old world Near Eastern ingredients.

    The FAT u eat…Is the FAT you wear…Do the potatoes in air fryer if u don't wanna be FAT – use a little veg stock to fry garlic…and mind.. The FAT U EAT.. IS THE FAT U WEAR!! Olive Oil is FAT!! and contrary to what "they" tell us…. It aint good for your body!!

    Wonderful. I'm Hungarian and we do them the same. Garlic and good paprika for the win. Goes so great. We also add pasta or tészta, as we call it. Very yummy. Nothing beats potatoes and paprika!

    Please, what is the weight of the potatoes you used? I am disabled, sometimes use canned potatoes because of budget, to prevent spoilage if I am not able to cook. I know this will not freeze well, about how long can it be kept in the fridge, assuming I use broth? Thank you. Your recipes and presentation are very helpful to me.

    Garlic is an interesting ingredient, sort of like cilantro. Some hate it, others love it. I love both garlic and cilantro. I am always looking for ways to add garlic to my meals.
