    Made this for dinner last night. Quick , easy and delicious. Husband asked me to put this on my 'keep' list. I am considering making this into an emergency meal using dried veggies and canned chickpeas and tomato sauce. Won't be as good as fresh but will work in a pinch when we lose our hydro and need to cook on a camp stove.

    Hi Albert, I LOVE your recipes but I cannot STAND CHICKPEAS/GARBONZO BEANS, I love spinach and I love eggs. What do you think would be a good sub for that which I LOATH(chickpeas/garbanzo beans)? Yes I know they are healthy and they are a 'superfood' but I JUST CAN'T DO IT, YUCK. Otherwise keep up the good work and Bless You and yours.
