    I've found the instant pot sous vide has horrible temperature control, but you can work around it. Since it sits on my countertop, I just put hot tap water in it and start it heating to 140ºF. After it's been "hot" for about 30 minutes, I can put the steak in and set it to 133º or 135º depending on the cut for a couple hours. I "overheat" the water because it has no circulator and the steak sucks the heat out of the water. I've found it never gets up to true temp even after a couple hours if you don't do that. All that said, it's convenient AF, so I don't bother to use the Anova for steak. I'd definitely use it for a roast. I finish it with a weed torch so it gets a nice crust without ruining the interior of the meat.

    I'm like you…o many gadgets! I have a sous-vide circulator, but also have the Ultra and the EVO which both do sous vide. Both of my pots seem to heat the water bath about 3 degrees cooler than the thermostat says, so I recommend testing with a digital thermometer and adjusting accordingly. I use my regular lid with the pressure knob on vent. I recommend not laying your meat on the bottom of the pot. You can elevate it with the rack that comes with the pot, and even close the handles of the rack down over the meat to keep it from floating, and even clip them together. Happy cooking!

    Enjoy the channel. The pot ( I have same model) runs cooler than temp says, by 10 degrees or more. You need to verify the temp of the water in several levels. Also the longer you cook it the more tender it will be. Two hours may not be enough time to tenderize the steak. To have it like Swiss steak you will want hotter ( to kill hard to kill bacteria) and longer cook times

    144° is perfect for people who like their steaks medium well. The sous vide makes it tender enough to enjoy the flavor without experiencing dry meat.
    For people who enjoy their steaks at a lower temperature, they will enjoy moist and tender steaks as well.
