Hello Simply Mama aka Angela…so I make tamales and they come out so good thanks to you…the only thing is I made cheese for the first time and I failed…they were horrible, not in taste but how they came out… how do I keep the cheese from oozing out…it was so upsetting to me…need tips on how to keep the cheese inside ☹️☹️☹️☹️

My paternal grandmother died when I was 10. I continued to stay summers at my grandparents house though it was only my grandpa there. One morning when I was 11 he asked me if I would make biscuits and gravy. A said I didn't know how. He produced a binder full of my grandma's hand written recipes. I learned how to make my grandma's biscuits and gravy.

I love tamales! I guess I should just make my own since every restaurant here, I have found, in Florida drowns them in some sort of mole, I grew up eating tamales with no sauce needed!

I puree a cup of fresh or frozen corn to the dough & I prefer using Masa Harina. The fresh or frozen corn added really reinforces that corn flavor that I love so much. The Masa Harina has a better flavor & texture. Thank you for sharing your recipe. I backpacked through Mexico in 1982 for 3 months & fell in love with the food & learned great recipes. We were invited to stay at several farms & ranches in exchange we helped with chores & the harvest. The families were so kind & refused to accept our money but I secretly left money behind after we departed. The best experience.
