Hello Matt, great vids and i have made a lot of them. Question on the different methods of the smoked turkey. Which do you like the best, the whole turkey or the spatchcock method? I want to do one for the family. Also having a Bloody this morning and your idea of using the Holy Voodoo for the rim is awesome, Hella good!
Do you make cornbread dressing too? I'd like to see your take on that because imagining the natural smoke in the gravy and dressing has my mouth watering!
What’s your thoughts on going with butter under the skin like your chicken?? I know you say temp not time… but can I ask, how one was this smoke, on a 15 pounder?
So not sure if anyone on here can give me some insight. I’ve got like 20 people coming over for thanksgiving so I’m rocking a 30lb turkey. I’ve seen mixed info about injection on a bigger turkey. I’m also trying to figure out cooking temp and time. I’m cooking on a Z Grills smoker and most things I smoke seem to cook on the shorter time frame (like if something says 35-45 min it’s always closer to the 35 min mark). It’s my first time being in charge of the turkey so I wanna nail it
My Uncle prides himself on smoking a dry ass turkey for our Thanksgiving every year, so I won't step on his toes. I will, however, make this stuffing, and tell him good job on the turkey 😂😂

Do you just rinse the outside off after the brine or do you rinse the cavity out too?
