I just got an electric smoker to complement my FTG600, and I can't wat to make brisket on it. Now I know what to do with the leftovers. Thanks, Neal and Amy!

The next time you smoke a brisket, keep all of the fat trimmings. Cube or grind them and put them in a pan on the smoker while the brisket is cooking. As the fat renders strain it into a jar. My last brisket gave me 32 oz of smoked tallow. Awesome stuff for smash burgers.
