    Hat there brother I just got done eating and watching you make that brisket Taco made me hungry all over again. It looks so good I wish I could reach through the screen and grab one!     The next time you smoke a brisket, keep all of the fat trimmings. Cube or grind them and put them in a pan on the smoker while the brisket is cooking. As the fat renders strain it into a jar. My last brisket gave me 32 oz of smoked tallow. Awesome stuff for smash burgers.
