    Hey Tommy! Really liked the way You trimmed it. You left a descent amount of fat on the fat cap which is gonna help with protecting that delicate meat from
    those hot spots you were talking about. But……You put it meat side Down on that hot grate that has no protection from the entire Hot Heat plate!
    Doing this the meat side powered through the point of creating a better smoke ring. You are wasting your time spritzing…….you're spritzing the fat cap which does nothing
    but roll right off. Spritz the meat side early and often to cool the surface of the meat to take on that smoke and get a nice smoke ring.
    No doubt You packed it full of flavor and it tasted excellent! But……when slicing, the meat side that was against the grate Crumbled! It Crumbled and You had a tough time
    getting nice even slices. Just looking out Bro! Smoke On! m/
