Instead of using tomato paste just add beef broth.

Sometimes I use smoked paprika in recipes like this or one pan scrambles. I also use oregano a lot more in a lot of recipes instead of just Italian recipes lol

the only thing i'll balk at is the use of pre shredded cheese and i'm only saying it because you went thru the trouble of using fresh veggies. in fact, i call for a boycott of pre-shredded cheese. it's lacking in flavor, steep in price and it's a disgrace to block cheeses.
