i just made this today but i used chicken broth and water. i had no beef broth. turned out good. and i used small red potatoes cut into quarters

i just made a chuck roast last night with green and red bell pepper, jalapeno, carrots, onion and garlic. i seared the meat before putting it in the crock pot hoping it would add flavor. 4.5 hours on high didn't make the meat tender so i put it on low over night and now it's as tender as the night!
