    2 shallots, diced
    2 stalkscelery, diced
    3 cloves garlic, minced
    2 tsp dried parsley
    1 tsp dried thyme1 bay leaf
    ¾ tsp salt
    ½ tsp pepper
    5 cups chicken stock
    Shredded Carrots
    1 Cup heavy whipping cream
    3 Tbsp cornstarch
    1 lb gnocchi
    Spinach

    Directions:
    1. Add shallots, celery, garlic, salt, black pepper, herbs, chicken breast, and chicken stock to the slow cooker.
    2. Cook on HIGH for 4 hours or until the chicken is fully cooked.
    3. Remove the chicken and shred the chicken and add it back into the slow cooker along with heavy whipping cream and shredded carrots. Cook this for about 1 hour on HIGH.
    4. Mix cornstarch in equal parts of water and mix well. Add this in parts to the slow cooker and stir to combine.
    5. Then add in your gnocchi and cook for an additional 30 minutes and the soup is thickened.
    6. Add spinach and when wilted you’re ready to serve it!
