    I tried this with pork shoulder but ran the slow cooker for 6.5 hours! I ended up cutting into the shoulder and seasoning the pork and also to ensure it thoroughly cooked. I added just the basic seasonings from the store, Montreal steak, salt, seasoned salt, and an organic mixed Shaker, touch of garlic. 1 pinch of rosemary, sweet potatoes, carrots, sweet onions, celery, carrots, and 1 tablespoon of butter. I did grill the shoulder outside for a few minutes on all sides and seasoned as needed. The house smelled amazing and that pot was cleaned out! Family approved!!!

    Hate to burst your "authority bubble" but….I throw everything in my slow cooker, season and close the lid and let it cook. BTW, EVERYONE raves over my "adequate", (as you put it), pot roast as well as my stew. I tried it your way, ONCE. pfft

    Ok, ok stop the presses! Try this. Follow John`s directions up to the point of putting on the lid. At this time go ahead and FILL THAT PUPPY ALL THE WAY TO THE TOP WITH CHUNKED UP YUKON GOLD POTATOES! Thats right, all the way to the top. Then put the lid on and go away. Cook for at least 5 hours on high or 8 hours on low. Leave that lid alone!!!!!! No need to be puttzin around in there as it will take care of its self, thats the whole point of slow cooking in a crockpot! Thanks John for a fantastic recipe (I just added some spuds) and as you would say, "ENJOY".

    Isn't locking down the lid while cooking dangerous? The instructions for my Crock Pot specifically warn against doing that. Locking the lid is only for when you're transporting it somewhere. This looks delicious by the way. I'll have to try it sometime.
