I wonder if you can use Chinese cooking wine instead of the sake?
Looks great, although I'm trying to cut down on single use kitchen tools like foil and parchment – do you think I would get a similar result by cooking in a dutch oven with a tight seal? I know there are vessels that exist just for fish (look like a fish sarcophagi) that have fallen out of style, but the principle seems the same either way?
