    Mmmmh, will try this one this week! One thing though, I see you throw away the water that you used for the shiitake. Joshua Weissman actually keeps it as a broth; it's so flavorful, it's a shame to throw it!

    4:15 Noooo, don't peel the beautiful skin! Kabocha squash is one of the few winter squashes that the skin is edible.

    The skin adds fiber, nutrients, and visual interest to the dish! Not to mention, it's absolutely delicious! Please go on and try this dish with the skin next time.
