    Great meal plan. Lunches:::: Grilled cheese and soup, Quesadillas.. with just veggies, or leftover or can chicken and cheese, slice up meatballs whatever kind you like. Take tortillas and make some homemade little pizzas, Egg salad sandwiches or rolled up in a tortilla, different kinds of wraps using tortillas, You can use tortillas for breakfast roll ups too… scrambled eggs, cheese, meats, veggies. And you could have them for lunch too. Make chicken or tuna, or egg salad and serve rolled up in lettuce leaves or just on top of lettuce. Maybe some rice, veggies, meat bowls for lunch. Just a few ideas, maybe you can use some of these ideas. Thanks so much for sharing, take care, stay safe and stay warm.

    swedish meatballs with mashed potato is sooooo delicious! I have a recipe for toasted granola, which is the most DELICIOUS thing, and dirt cheap as well – rolled oats, a few sliced almonds, some sunflower seeds, mixed in a coating and toasted and eaten with yoghurt – reealy cheap, really filling! Let me know if you's like the recipe. My 17 yr old son loves it.

    My mom does half ground turkey and half ground beef because her husband isn't a big fan of ground turke. I do plain ground turkey because I've gotten used to it, mostly because it's been cheaper than ground beef for some time.

    For lunches I tend to have toasted wholemeal pitta bread with hummus and salad or a small tin of tuna with salad leaves, cucumber and spring onion and a bit of salad dressing, sometimes I have half a pack of microwave grains with salad, boiled eggs and salad, hummus and carrots, cucumber, peppers, soup…I rarely have a sandwich but eat a lot of salad. My partner, who is super healthy, swears by a smoothie for lunch every day.

    Claire, since we are such good friends now 😜 may I ask an almost-personal question? I notice you often freeze meat in the package it came home in. I spend a lot of time wrapping and repackaging meat. Partly this is because I package it in small quantities for one person. I also hope it will last longer in the freezer. So, do you ever feel your meat suffers from freezer burn or do you use it so quickly it doesn’t matter? I wonder if I’m wasting time and freezer wrap. Thanks!

    You're way ahead of me and planning and using up what's in my pantry I need to get on this! I wanted to recommend something that we really find a great option and that is Barilla makes a protein Plus pasta, not sure if you have it in the UK but it's excellent It's made from chickpea flour and regular flour to combination but it's higher in protein. We've noticed that we feel much better after we eat it less sluggish and my husband's diabetic and it actually allows him to eat a normal portion without spiking his sugar! Much better than whole wheat pasta in taste!

    Hi Claire, great video! Just as a heads-up, the mint you bought is an excellent Perennial which thrives in the UK and is safe to grow/keep outside and winters well. A WORD OF CAUTION: Unless you absolutely LOVE mint, do not keep it in your garden, either in the ground or in a container! It loves to spread and can be a bit of a thug. My Husband likens it to knotweed in how it spreads everywhere, even into garden and beds many feet away from the source plant! We can attest to this (it grows like wildfire here in Caerphilly!) and even at the National Botanical Garden of Wales in Carmarthen, they have the exact same problem containing it! Growing it indoors on a windowsill or is a safe way to keep it contained xx

    You did a great job on this ! Well done ! Your food prices are amazing, wow! When you plant the mint, plant it in a container. If you plant it in the ground it will take over the entire yard. tfs 🥰❄☃☔🌞🏜✝💗

    Honestly, hun, your massive duck will be a lot less massive once you’ve cooked it and are trying to make a meal with it, there’s hardly any meat on them (although it is delicious)…you’d be best advised to pad it out with lots of other stuff. There’s a reason why you get crispy duck pancakes full of veg, or duck fried rice when you see it on the menu for a Chinese takeaway!

    Some ideas for lunch:
    1.Tortilla rolls with any combination: spread any spread you have like tomato sauce /hummus/salad dressing/mustard/ cream cheese etc. Add lettuces/ spinach leaves, tomato, pickles. Now add proteins: any leftover meats/ sausage/ boiled eggs / tuna can / falafel etc. Roll it, enjoy it. The combinations are endless. You can make it Asian/ Mediterranean/Indian/ Mexican stile.
    2. Tomato soup+ grill cheese sandwich
    3. Vegetable casserole: cut any veggies you have, add eggs, cheese, flour, salt, garlic powder, pepper. Bake in a baking pan. Cut once cooled.
    4. Omelettes
    5. Perogies/ dumplings
    6. Hot dog
    7. Sushi
    8. Pocket pita bread (with anything inside)
    9. Pie / tart (not sweet)/quiche. Like leek+muchroom+ white sauce, or same with leftover cooked chicken

    This time of year my go to lunch is nearly always homemade soup. It's a great way to use up anything in the fridge that's looking a bit tired! I also make homemade croutons by cutting any stale bread into cubes, spray with a bit of oil and bake in the oven. I only do this when I am putting the oven on for something else, they keep well in an airtight container for a few days.

    Ratatouille another idea – roast aubergine, courgette, onion and bell peppers, seasoned with salt to absorb the water content and pepper, then slowly caramelize a few whole cloves of garlic in olive oil on the hob, add to that some quartered tomatoes (or whole cherry tomatoes) and gently heat till they start releasing their juices. Add the roasted veggies to the pan, mix and serve – nice with pasta or a bit of chicken. Any leftovers keep well and even improve 2-3 days in the fridge.

    I switched to wholewheat pasta about 5 years ago . I love it and it really fills you more . I adore duck but only cook the fillets . A whole duck is something else I've been told .It can become tough if cooked for too long but I don't know if it is true .
