    You are so adorable. Loved this presentation and have saved the recipe! I want to have a gumbo themed party & this is perfect timing. I will definitely use this recipe. I love that you used fish sauce, I have been using that and anchovies for so many things lately. Adds a great depth of flavor.

    B) What does filé actually taste like? I’ve had it as an alternative gumbo thickener when peeps didn’t want to use okra, but I’ve never seen it used as a seasoning. I’m picturing something like unsweetened root beer, but I don’t actually have any idea.

    Well executed! You're clearly from Louisiana and your cooking techniques show it remarkably. Nice recipe. Yes, the fish pieces aren't exactly typical but it works and looks delicious. I'd like to see you make a Viet/Creole version of pho, a good banh mi, and your favorite salad.
