    I trim up a brisket very similar to you but I will take off a little more of the cap on the point side of it. But I have been trained to cut away from my free hand. My dad's best friend owned a butcher shop and I helped out trimming and he was a stickler about blade facing away because it was his job to trim all day long and couldn't afford to get a boo boo.     Briskets are very daunting to me. I’ve never rant a smoker even though I build them. Stick burners are a science though and watching you cook that much meat tells me you got a good handle on what you’re doing Dash. Way to go man. One day maybe brisket for me. My wife loves them.

    You trimmed that brisket like a champ! I'll say one thing that I learned doing my brisket was the importance of a SHARP knife! I cant imagine trying to manage a cook of that size! Great informative video here Dash!

    Nice vid my man. These vids are important because folks sometimes dont know how much work goes into cooking the meats that they love. You could do a vid based on the clean up of all of the oversized pans and dishes that we use!
