First off, Happy Birthday 🎂🎉🍻. Next the Porchetta looks great. I liked your idea of cutting the strings longer but it appears that maybe something else is needed. So I'm thinking maybe placing long toothpicks or some short bamboo skewers next to each string to locate each one might be a good idea? FYI, I still haven't found a pork belly with the skin on it yet. I'm not so sure it's a problem though. Anyway, have a great day, it's time for me to get to chores. 🌤🔥🍻🎣
