    Wow! Lots of good stuff going on in this video. Very thorough and informative. So much that I had to digest it in two parts. Man I like smoked salmon too. You were enjoying that.
    About the wings and space on the smoker racks. Have you ever considered impaling the whole wings on bamboo skewers. That way they can be stretched out straight and not take up hardly anymore room than a shish-kebab and can be laid side by side. Of course that would be more work and time consuming when doing forty wings like you did. The extra space saved on the smoker may not be worth the effort. However, if the cooking space ever does become crucial you may consider the skewer trick.

    Good pro tip with the glove liners bro. I pretty much ruined my nerve endings in the beginning before I got hip. Nice looking cook tho fam. Anyone that reads this pay attention to his water pan. Offset smokers are a beast sometimes and that water helps stabilize temps tremendously.
