Russian Beet Soup (BORSCHT!) Paleo AIP Instant Pot recipe

This Russian beet stew is the perfect AIP substitute for tomato soup! I didn’t set out to make a tomato soup, but that’s what it tastes like- delicious!

    Sometimes I use mushrooms instead of meat and usually in addition to meat because mushrooms add an interesting texture and earthy flavor. I also always use parsnips which also adds an interesting flavor and aroma. My Mom made it this way and it always brings back good memories when I make a pot..

    Hi Stacey, Thanks for this recipe 😉 I've never eaten borsch with meat, here in Poland we often make kind of beets soup to drink made of root veggies, beets, onions, garlic (and dried smoked plums in winter). I'll try your version. Did you try to drink beet sourdough ?

    My Ukrainian heart hurts now. Borshct, especially with this spelling is originally Ukrainian dish…
    I use tamarind paste in my borscht as well, even before AIP. Acidity helps beets to look vibrant. Also I add green (unripe, sour) plums when they are in season.

    Please help.. what to do, if I react to basically everything? It seems I react to histamine, amine, salicylate, oxalate and probably more that I'm not aware of .. I think that meat doesn't cause me so much issues if it's fresh, but I'm not even sure there.. aip doesn't help me at all since I can't eat even 5% of the food.. I'd wish to get out of this.. it seems so unlikely now.. I believe though..

    Fantastic twist on the borscht, Stacey!! 🙂 two small pieces of advice from a Russian person (St Petersburg based) : 1) it's best to use stew beef, and instead of frying it, boil it in a pot along with a few marrow bones, don't forget to add bay leaf and whole peppercorns; 2) for the deep ruby color, saute your beets in a separate pan with a couple of table spoons of apple cider vinegar 🙂
