    The worst part. You can only cook it one way. Roast, medium rare or rare. Thinly sliced. That’s why is a cheap cut marketed and labelled with big attractive labelling. I even prefer the shin, because a slow cooked shin is more enjoyable that the topside roasted in its best cooked form.

    I used to get all my meat from a supermarket until I went to a porterhouse who cut all their own beef and pork in house. At chaper prices too as it cuts out the middle man. You can get a full sirloin of beef, about a meter long and 30cm wide for 72 quid. The difference in quality and taste is night and day. 👌
