Sugar was an expensive ingredient and so bakers would use beet puree. It was cheaper and readily available. So that's what I use with the buttermilk and vinegar
Red velvet is LITERALLY just chocolate cake with red dye. If youre making your recipe differently, thats good for you, but traditionally red velvet is JUST a red chocolate cake. There are other colors of "velvet" cake as well… youre sadly misinformed. Or you just want to feel special 🤷♂️
I dont know, but cutting into anything with a knife to be met with bright red crimson…is just off. My eyes eat before my mouth…Velvet cake is just not for me.
