    ok got to add my 2 cents in here LOL You did great Bev, looks awesome BUT now you have got to try black eye peas cooked with ham pieces and put juice and beans and ham in bowl over rice and add raw onion on top totally awesome 🙂

    I love it that you tried and liked the red beans and rice.  I'm from the south, but I never had rb&r until I visited a friend in New Orleans.  There was a little joint (bar) called Buster's that gave you a plate of beans and rice and a hunk of french bread for 60 cents (this was about 1972-3).  They were wonderful.  The best beans IMHO are always cooked with ham and/or sausage, and come out nice and creamy with enough gravy to pour over the rice.  Another thing I've learned is to have a salad with a vinaigrette or italian dressing with them.  I like to put the salad on the plate next to the beans and rice.  There's just something about the taste of that vinegar with the beans that's fabulous.  I think that's probably why I like to use tobasco on my beans rather than sriracha (which I love) or one of the "Louisiana" hot sauces.  Tobasco seems to have more of the vinegar taste.  Another thing I learned years back was not to salt the beans until they are completely tender – salt supposedly toughens the skin of the bean and they will take longer to cook.  I've read that red beans and rice are a traditional Monday (wash day) dish in New Orleans from many, many years ago.

    I don't use a crock pot, but cook it on top of the stove.Try it with pinto beans instead of red beans. I always start a pot of them with chopped celery, onion and green pepper, after the beans have soak for a while. Then I put a smoked ham hock down in the beans and let them cook on low all day.

    Just a tip next time when the beans are cooked take out about a cup maybe more mashed them til they look like mush add them back to the pot stir let simmer you will have a rich thhick gravy so good! You did great for your first time

    I'll have to admit here in Tennessee growing up most of the rice I ate was sweet rice. Had butter, sugar (or honey) and cinnamon in it. Ate it for dessert. Moved to Charleston, SC. And ate rice in everything and rarely even cooked potatoes, lol. My favorite would have to be smoked sausage, bell pepper, onion and rice (on a special day shrimp and scallops thrown in) Yum Yum!
