    I love the look of these videos! Really well done but I am confused by something. It is my understanding that meats should always be pressure canned; that the only foods that do not require pressure canning are acidic foods like tomatoes or pickles etc
    Can you set me straight please?

    Canning chicken like this is a good way to get botulism. It needs to be canned under pressure to control for botulism bacteria. Check the usda guidance or even the ball blue book for safe recipes to can chicken.
