    recipe for Pineapple Fried Rice:
    2 T oil

    2 cups pineapple, medium dice

    1 red onion, chopped

    1 red bell pepper, medium dice

    1 tbsp fresh ginger, grated

    3 cloves garlic, minced

    1 tsp sesame oil

    2 cups cooked rice

    cooked edamame beans

    4 green onions, finely sliced

    1 tbsp soy sauce

    1 tbsp (or a little less) Sriracha

    fresh cilantro, chopped

    1 lime, juiced

    1/4 cup roasted cashews

    In a large skillet on med-high heat, heat oil and add pineapple and cook a little.

    Add red onion and cook until pineapple and onions are browned.

    Add red pepper and cook until they start to brown and they are soft.

    Add ginger and garlic and some sesame oil and saute until golden.

    Stir in rice, edamame, and green onions, as well as the soy sauce and Sriracha and cook until heated through.

    Stir in cilantro and lime juice.

    Serve with roasted cashews.

    I was never a fan of the Big Mac, but for a short time they sold a snack version in a wrap and I was obsessed with those. I was so disappointed when they stopped selling those. A Big Mac Bowl offered as a tortilla wrap would be a huge winner for me!!!!!

    First – thank you for the excel spreadsheet. I’m not very well versed in excel so this will help a lot with my new computer!
    Also, we are going on our anniversary cruise 6/2-6/9 and in the past we ended up throwing away or giving away so much food before we left. This time, I stopped shopping and we are using what we have for this week and next. I processed a lot of my produce so that it won’t go to waste.

    $100 a week budget would be great! Thanks for all your inspiration, gonna try the big max bowls this weekend

    I love your content, you are helping so many people by sharing your knowledge. I had never heard of a Big Mac Bowl before, I am going to make them for my grandkids.

    I have a silly amount of food in the pantry and freezer, I think we could eat out of our supplies for about 2 months with just $20 for fresh veg and fruit that I don’t grow. Thank you Maria. 13:58

    Suggestions?: How about Rice! Rice is so versatile and still cheap, it freezes well, and rice can be used as a dessert or main meal. Have you made rice balls, they would freeze very well. I haven't tried this form of rice, but, I understand that the short rice is used because it is sticky and holds together.
    These would be healthy snacks as well.

    I like you content. I think your budget is great especially with small kids. My kids are 17 and 21 so typically do about $50 a week. And a $5 stock up on sales or something we need as staples or something extra for them. They are not used to being a budget but they are we doing really well with it. I only have 1cday a week off and normally spend that day doing meal preps and cleaning. I miss my kids being so young and your doing an amazing job. And remember they may be small and young but you are teaching then a good lesson in life. My 21 year old is now starting to utilize this and I'm greatfull. Tfs and doing what you.

    I was never good at math, but, you are spending around 2.13 per meal for the month, with exceptions of eating away from home?
    As Mom used to say, 'If fellow didn't have to eat, think of the time and money that would be saved. ' 🍗 I like your meals in a bowl.

    The hardest lesson I learned, when I didn't have much money, was to shop my fridge/pantry/freezer before thinking to go grocery shopping! Now I do the Kitchen Shop on a regular basis since I can't/won't go into an actual store (I don't drive and have health issues..I'm not a wussie)….I love all of your videos but this one rang my bell…you're good Maria!
