OMG, this so reminds me of my childhood too. Every great now and then my MawMaw down in Morgan City, LA. would make Crawfish Bisque and it was always just mouthwatering.
I remember one summer while visiting my MawMaw and her sister, my Aunt Inez got together, and as you said it's very labor intensive, and they slaved over a HUGE pot of Crawfish Bisque. Once they had put it all together, they slid the pot to back of stove to simmer for a couple of hours. We all went to the store to get some fresh French Bread to go with our dinner. After a while we got back home to find that the HUGE pot of Crawfish Bisque was GONE! Well after calling everyone they knew, it turned out that my Aunt Inez's drunk husband had come home and took the pot of Crawfish Bisque back to his favorite bar and his buddies devoured almost all of the pot of Crawfish Bisque. I have never seen two more mad cajun women in my life. I remember hearing someone say that was grounds for divorce. At 7 or 8 yrs old I didn't really understand that at the time, but I certainly do now.

Just did this recipe; as close to faithfully as possible. Did just stuffing balls, not stuffed heads; but absolutely fantastic! I used Tabasco & Tony's to get it to my tastes; but, great recipe & presentation!
