When I make this in a regular pot on the stove I cook the rice first then remove it from the pot, set aside. I cube the chicken before adding it to the pot. Then I whisk together the mayo, broth and seasonings. I place the broccoli in the bottom of the pot, layer the cubed chicken on top, then pour the sauce over everything without stirring. Cook according to directions for cubed chicken. When it's done, I gently scoop out portions without mixing or breaking the broccoli into small mushy pieces. Serve over the rice.
Also, if you have no objections to cooking with wine, you could add a little dry white wine to the mayo/broth mixture and use mushrooms instead of broccoli. Can be served over rice or pasta.
Plus, if you don't have chicken broth available at the moment, you can use slightly diluted cream of chicken or cream of mushroom soup. Dilute depending on the thickness of the sauce you desire.😀
